SNACK WITH A SALAD!

Ingredients (1 portion)

  • Baby spinach 35g
  • Cremini mushrooms 120g
  • Sliced oven-roasted chicken breast 55g
  • Hummus 30g

[1 portion = 161 cal]

Tips:

If you eat it as a snack go all in and use your hands! I feel that there is something liberating about not using cutlery!

If you want to reduce the caloric amount and increase the proteins you can also switch the hummus with 0% fat Greek yogurt!

I am a big fan of snacking! Especially on those days that I am home dealing with paperwork or studying, I like to have something to nibble at… last summer I finally realized I can easily make a salad bowl and just eat that during the afternoon! It’s easy to make, takes exactly 1 minute, plus it’s healthy and tasty! I place the bowl near my laptop and nibble away at my salad while working!

Instructions

  1. Wash and drain baby spinach and mushrooms. Slice the mushrooms.Put them in a bowl.
  2. Roll each chicken slice and cut them in half. Put them in the bowl.
  3. With a small tablespoon add the hummus. ENJOY!
