- Cauliflower 340g
- Chickpeas 400 ml (1 can)
- Apple 220g
- Avocado 1 medium
- Baby spinach 80g
- Lemon 1
- Olive oil 2 Tsp

Cool down the cauliflower and chickpeas mixture before adding them to the rest of the ingredients.
You can add the lemon juice also to the rest of your salad. I prefer to just have a concentrated taste on the apples.
You have to try it to understand!
Something you don’t know about me is that I am nose blind. So I don’t really get how people don’t like cauliflower…I mean I know they smell really bad but I can’t really imagine it…Still, if you can go over the smell, the taste of this salad will amaze you!!! Just try to believe!
Preheat oven at 400F.
Wash the cauliflower and cut them in medium pieces, bake them for 20 minutes with 2 teaspoons of oil and as much salt as needed, then add the chickpeas. Cook for other 10 minutes.
- Cut the apple in small pieces, cover them with lemon juice and put them aside.
- Slice the avocado.
- In a bowl, mix all the ingredients together. ENJOY!
