- Baby spinach 60g
- Light Feta 100g
- Olive oil 2 Tsp

I cooked the quinoa by using 200ml of boiling water. Let it cook for 15 minutes.
You can add lemon juice to make the salad sour. It will give your salad a little bit more taste!
Fill a cup with the mixture until is full. Cover it with your plate and turn it 180º to get the shape on the picture.
A healthy, filling salad
Quinoa is basically a seed used as a cereal. I discover this “superfood” when I started university, and it became a constant in my summers. This salad is a good balance between fat, protein, and carbs. A good compromise to get your protein intake if you are vegetarian or just don’t feel like having meat.
Cook the quinoa following the instruction on the box.
- Cut the cherry tomatoes, baby spinach, and feta in small pieces.
Mix all the ingredients together. Add the oil, salt as needed. ENJOY!
