Ingredients (2 portions)

  • Quinoa 100g
  • Cherry tomatoes 415g
  • Baby spinach 60g
  • Light Feta 100g
  • Olive oil 2 Tsp
  • Salt 

[1 portion = 365 cal]


I cooked the quinoa by using 200ml of boiling water. Let it cook for 15 minutes.

You can add lemon juice to make the salad sour. It will give your salad a little bit more taste!

Fill a cup with the mixture until is full. Cover it with your plate and turn it 180º to get the shape on the picture.

A healthy, filling salad

Quinoa is basically a seed used as a cereal. I discover this “superfood” when I started university, and it became a constant in my summers. This salad is a good balance between fat, protein, and carbs. A good compromise to get your protein intake if you are vegetarian or just don’t feel like having meat.


  1. Cook the quinoa following the instruction on the box.

  2. Cut the cherry tomatoes, baby spinach, and feta in small pieces.
  3. Mix all the ingredients together. Add the oil, salt as needed. ENJOY!
